I have always been annoyed by BA for the reasons you state. I like the Cooks Illustrated line now because the guy is a the supreme geek of foodies (I never knew that was a word before). But he'll tell you if it's necesarry to do the pretentious steps a recipe lists or if you can do short cuts. Or if you really need to use saffron when Mrs. Dash will do.
